Shrimp Scampi

(a lighter no butter version)

 

1# raw shrimp, fresh or thawed, shelled & deveined

Olive oil to generously coat bottom of skillet

Zesty Italian dressing

Minced garlic to taste

Salt and pepper

 

Toss shrimp with dressing, coating generously.  In a skillet, heat olive oil and garlic (careful – olive oil can overheat quickly!).  Add shrimp mixture, salt and pepper.  Sauté, stirring continuously, until shrimp turns white and loses its opaqueness, about 6-8 minutes.

 

Serve immediately with your favorite pasta, sautéed fresh vegetables, or with a tossed salad.
